Veggin' Out: The Healthy Scratch

Happy Monday, friends!

I just got back from a wonderful weekend visiting my friend Jessica in Buffalo, NY! It was my first time driving to Buffalo through Canada and I have to admit: those few hours where you have zero cell service through Canada are actually pretty great. I just drove, listened to my music and enjoyed the serenity of not having my phone chiming.

We had perfect weather, which meant we were able to walk around and enjoy being outside a lot of the time that I was there. Friday night, we went to a restaurant near her apartment for dinner and then went out in downtown Buffalo to a really amazing rooftop bar in the city. On Saturday, we got up and went to a yoga class at a studio right above her cousin's kombucha store! If you haven't heard of Bootleg Bucha, you need to check them out! They're an awesome kombucha company based in Buffalo, NY. After yoga, we hiked around Niagara Falls, which was absolutely beautiful! My family and I went to Niagara Falls FOREVER ago, so it was nice to be back absolutely breath-taking to be hiking in the area.

After our hike, we walked around Harbor Center in Buffalo and stopped at The Healthy Scratch for lunch! The Healthy Scratch is all about sharing the quality and benefits of organic and clean eating, especially in their products. They offer everything from bowls to smoothies to cold-press juices to toasts and specialty coffees. I had their "Get Lit" juice -- pineapple, cucumber, kale, jalapeño, spinach and matcha -- SO good and so refreshing after our hike! Along with my juice, I also had their Kale and Quinoa Salad, which had kale, quinoa, kalamata olives and a lemon vinaigrette dressing (it also came with chicken and cheese, but I omitted both of those!). The store itself is so cute and bright.  They even offer Bootleg Bucha there!

After lunch, we walked around outside by the water and soaked up the warm weather and sunshine. Saturday evening, we had the pleasure of having dinner with Jess' parents, who are honestly the nicest people you will ever meet. They are so kind and thoughtful and always make me feel like I am part of their family whenever I am with them!

It was seriously such a lovely weekend and I couldn't have been more grateful for my time with Jess and her sister, Michelle.
